You guys, this is a big deal. I think I broke my energy drink habit.
Seriously, almost every morning I would swing by the gas station and grab a Monster to start the day. It was the sugar-free, zero-calorie kind, so it must have been fine, right? It's no secret that energy drinks aren't too great for you, and they're so expensive too! My habit was costing me $12.50 each week (or $50 a month, or $600 a year), and that's not including any other junk food I bought during these gas station trips.
This all changed when I discovered cold brewed coffee. I can make a giant batch in my french press that will be there for me all week. It was seriously changed my mornings. I use one cup of the cold brewed coffee, one cup of almond milk, and a tiny splash of vanilla creamer to make my drink. It's so much better than Starbucks or an energy drink, and it's so much cheaper too. My $7 bag of Starbuck's Brezza blend has gotten me through 5 full weeks of coffee. Not too bad if you ask me.
Do you know what else goes well with cold brewed coffee? Lemon corn pancakes with blueberry compote! Johnny and I bought a box of Archer Farms Golden Corncake Pancake mix from Target a while ago and I finally figured out what to do with it. It's not the most homemade of meals, but it made for a perfect Sunday morning.
Lemon Corn Pancakes with Blueberry Compote
Inspired by the Lemon-Blueberry Corn Waffles in Vegan With a Vengeance
- 1 box Archer Farms Golden Corncakes pancake mix (from Target)
- Zest of 3 lemons
- 1/2 cup blueberries (approx.)
- 1 tbsp sweetener (honey or agave)
Mix the pancakes according to directions. Add in the zest from the three lemons while mixing. Cook pancakes according to directions. While making the pancakes, combine the blueberries and sweetener of low-medium heat. Let it rest over low heat to cook down, stirring occasionally. Top pancakes with butter and blueberry topping. Enjoy your super easy, crowd-pleasing meal. Make sure you freeze your leftovers to enjoy on those crazy weekday mornings!
